White Bean & Kale Soup

I am not a huge fan of soups, but oh boy, this one is good! White Bean & Kale Soup is a perfect combination of ingredients, and it tastes delicious!

It’s a perfect light meal for lunch or even dinner. It was my first time trying kale in a soup, and I have to say I love it! I wasn’t sure how it would taste and if it won’t ruin the whole dish, but it fits perfectly!

So if you are not a huge fan of kale, or at least you think you are not, give this recipe a try, and you might change your mind.

I am not kidding.

This fresh sourdough bread fits perfectly with this soup! If you happen to have Lidl in your area you should try their bread. You can get a fresh, still warm loaf of bread for a reasonable price.

To make it in INSTANT POT: add the soaked beans with water, cubed potatoes, broth and cook on High Pressure for 8 minutes. Add the kale and Saute for another 10 minutes. Add coconut milk to make it more creamy.

Yields4 Servings

 2 cups cooked white beans
 4 cups kale
 2 medium potateos
 2 cups vegetable broth
 2 cups water
 2 bay leaves

Soak beans overnight and cook them according to the instructions on the packaging, you can also use canned beans.

Heat the and water broth, add cut in cubes potatoes, and bay leaves. Cook until potatoes are soft.

Add beans, kale, salt, and pepper. Cook for 10 more minutes.
