BOO! This year I celebrate Halloween a bit different than usual. Welcome to my Vegan Halloween!
Are you guys ready for Halloween? I am totally ready! 😉
Today I want to share with you a few vegan recipes that you can use for Halloween party or just treat yourself in Halloween spirit.
Let’s start with Spooky Pancakes for Breakfast. I love pancakes; therefore I had to add them to today’s menu.
– 1 cup flour (your choice)
– 2 tbsp cornstarch
– 1 tsp baking powder
– 3 tbsp maple syrup / blue agave
– 1 tsp apple cider vinegar
– 1 cup plant milk
– 2 tbsp melted cacao butter/vegetable oil
– 1 tsp activated charcoal (for black color)
Heat a dry frying pan on low heat. I used a non-stick pan if you use a regular pan you might need to add a small amount of oil.
Mix the dry ingredients in a large bowl. Next, stir in the wet ingredients until well combined.
Ladle approximately 1/4 cup of the batter onto the dry pan and cook for about 1 min (or when bubbles start to form on top), carefully flip onto the other side. Cook for another minute or so.
I topped my pancakes with fruits and nuts. However, you can top them with whatever you want!
Now it’s time for something less sweet and even scarier! Stuffed Peppers are an excellent lunch idea or party treat!
– 6 bell peppers
– 1 cup vegetable broth
– 1 cup millet or quinoa
– 1 can black beans
– 1 zucchini
Preheat oven to 350F. Cut tops off of peppers like you would a jack-o-lantern, remove seeds, and wash thoroughly. Place in an oven-safe dish arranged upright and bake for 30 minutes.
In the meantime, cook millet/quinoa following the instructions on the package. Once the millet/quinoa is ready to move it to frypan fry with chopped mushrooms, zucchini, drained black beans, and vegetable broth.
After that, when peppers are ready, remove from oven and fill with stuffing and bake for an extra 30-40 minutes until peppers are soft.
Who doesn’t like spaghetti?
I think I don’t know a single person who does not like it. There are so many versions and variations to make this dish that everyone will find the one that tastes the best for them. I made it myself in a few different versions. Try this Vegan Spaghetti Bologneseor today’s Bloody Spaghetti – Halloween version.
In other words, I am obsessed with pasta, in case you didn’t notice 😉
– black bean spaghetti pasta
– tomato paste
– 1 can dice tomatoes / 5 fresh tomatoes
– 2 tomatoes
– salt, pepper, paprika
Boil the pasta according to the instructions on the package. To make sauce cut 2 tomatoes and blend them until smooth, add 2 tbsp tomato paste and blend again. After that, move the sauce to the pan and simmer on a low heat for 5 minutes. Add diced tomatoes (you can use canned tomatoes or fresh ones) and spices, combine and simmer for 10-15 minutes.
Cover the pasta with tomato sauce and add some mashed avocado on the top.
I wish you all a spooky Halloween! Hope you will have a great time whenever you and whatever your plans are for this day!
