Sweet & Sour Chicken

Sweet & Sour Chicken with rice is a quick, simple dish and tasty for the whole family. You can add turkey or chicken to it, and filling dinner is ready!

Sweet &  Sour Chicken

If you are not a huge fan of pineapple in your dishes, you can easily skip the fruit; however, keep the sauce’s juice. It adds this sweet taste, and you won’t be able to taste the pineapple at all!

I like to chop mine pineapple into tiny cubes. I find it tastes so much better than the big chunks.

SUBSTITUTIONS

PINEAPPLE – you can use fresh pineapple and juice it; you can use fresh pineapple and a pineapple juice, or the last option is to use canned pineapple.
VEGGIES – you can use any kind of bell pepper that you like the most or have in your fridge; add any veggies that you need to use up; most of them will taste great in this sauce. I added some zucchini even though I had not planned on adding it.
RICE – use white or brown rice, but also cauliflower rice will taste great!

Sweet & Sour Chicken

 2 chicken breasts
 1 red bell pepper
 1 carrot
 1 cup finly chopped pineapple
 1 inch fresh ginger
 ¾ cup pineapple juice
 ½ cup water
 5 tbsp tomato paste

Cut the chicken into small cubes, fry in a large pan until the meat is golden brown.

Dice the peppers, peel the carrots and cut into long sticks. Peel the ginger and grate it.

Put the vegetables in a small pan and sauté for a while until the peppers start to glaze, then put everything in the pan with chicken. Stir and pour water and pineapple juice, add diced pineapple, tomato paste. Season with pepper and salt. Cover and cook for 30 minutes over low heat.

In the meantime cook rice.

When the dish is ready, you can thicken the sauce. In a glass, combine 1/3 of water and 3 teaspoons of cornstarch, mix and pour the sauce over the mixture, bring to a boil while stirring, cook for 1 minute more, and ready.
