Roasted Pepper – Feta Spread

This Greek-inspired Roasted Pepper – Feta Spread will taste delicious on freshly baked bread, on a pita sandwich, or even as a dip for fresh veggies. The combination of sweet roasted pepper, salty feta cheese, and a splash of bitter lemon juice create this perfect fresh and satisfying addition to meals.

This simple and easy Greek appetizer will be perfect for your next gathering or celebration. However, it will also work magic during a weeknight dinner, especially if you and your family love to munch on something before you get the main dish.

Want it more creamy?

If you want to make the Roasted Pepper – Feta Spread more creamy, add some Greek yogurt and blend it with all the ingredients. Don’t have Greek yogurt? Don’t worry! You can easily substitute it with cream cheese, or even cottage cheese if that’s what you have handy.

The creamy version might be more appealing to the more picky eaters, and we all know at least one.. 😉

What kind of feta cheese do I use?

I used crumbled feta cheese; however, you can use any kind. If you use salted feta, make sure you adjust your seasoning, so it doesn’t come too salty.

Roasted Pepper – Feta Spread

Yields1 Serving

 1 red bell pepper
 3 cloves garlic
 ¾ cup feta cheese
 3 sun dried tomatoes
 1 tbsp lemon juice

Cut the pepper in half, remove the nest, wash, dry, and place on a baking sheet lined with baking paper with the cut side down. Bake in a preheated oven for about 30 minutes at a temperature of about 425F.

Put the baked pepper into a small pot and cover with a lid. Set aside for about 10 minutes. After this time, remove the skin from the peppers and set aside to cool completely.

Add chopped garlic and feta cheese, and tomatoes, and blend all together until smooth. Add the lemon juice.
