These Roasted Delicata Squash Fries make a tasty side dish that is packed full of flavor. 

They are so delicious you will forget about french fries. They taste so much better! I was so surprised by how good they taste and how much I love them.

This is one of my favorite squashes. I discovered it not that long time ago, and since I am obsessed with it. My favorite thing about this squash, though, has to be the fact that you don’t have to peel it. Yes, that’s right, you can eat the skin! It’s super easy to prepare. The sink on delicata squash is really thin, and when it’s roasted, it becomes nice and tender, so it’s totally edible.

how does the Delicata Squash taste?

You might be surprised by its taste; I was. It’s actually much sweeter than any other squash. From all the squash types I’ve tried so far, this one is the sweetest. That’s why pairing it with something more spicy or sour might be a good idea.

You can twist the taste easily by adding different seasonings. It was just my second time working with this squash (Delicata Soup & Crispy Chickpeas), so I kept it safe. However, the next time I am going all-in with trying different spices and seasonings.


Roasted Delicata Squash Fries definitely taste the best straight from the oven when they are still warm.

how to serve Roasted Delicata Squash Fries?

You can serve it with any dish that goes well with french fries: burgers, baked chicken, baked fish. You can also toss the roasted delicata on a salad to add some healthy carbs!

Delicata Squash Fritters

These Delicata Squash Fritters make a tasty side dish that is packed full of flavor. 


  • 1 medium delicata squash
  • 1 tbls olive oil 
  • salt, pepper 


  1. Preheat oven to 400 degrees F.
  2. Cut delicata squash lengthwise, and remove seeds.
  3. Place squash in a bowl, and add the spices and the oil.
  4. Mix until everything is coated well.
  5. Place on a baking sheet and put in the oven for 20 minutes.
  6. Remove squash and plate.
