Quinoa Strawberry – Coconut Cereals

Quinoa for breakfast? Who would have thought this can be a good idea? Well, me 😀 This Quinoa Strawberry – Coconut Cereals will be a perfect option if you want to try something new, looking for a high protein breakfast idea, like to experiment in the kitchen.

The recipe is for one serving, but you can double or even triple it! This Quinoa Cereal makes a great meal prep meal. I usually make two servings, eat one fresh, and keep the other one for a different day. It will stay fresh for a couple of days, keep it on an airtight container. I recommend keeping the toppings separately; otherwise, it will be hard to warm it up, and it will all get soggy.

My favorite thing about this recipe (besides how healthy it is!) is how creamy it is! I think I officially like quinoa in the breakfast version like that much more than the savory version!

Yields1 Serving

  cup quinoa
 ¾ cup almond milk
 1 cup strawberries
 ¼ cup coconut chips
 1 tbsp honey
 1 tbsp peanut butter

Cook the quinoa with almond milk; on medium heat under a cover until it's soft.

Add honey and mix well together.

Top with strawberries, coconut chips, and peanut butter.
