Pumpkin Granola

Once you start making homemade granola, you’ll be completely hooked! And this Pumpkin Granola screams fall.

Making your own granola is truly satisfying. It’s probably not the first thing you think of when you consider cooking and prepping more foods for yourself — after all, there are tons of delicious specialty granola on most grocery store shelves, and it’s so much easier to get one from the store. They are quite expensive, and by quite expensive, I mean they are freaking expensive! Especially if you want to buy a bag that has only natural ingredients, it adds up.

Once you realize how easy it is to make your own, you will be hooked! Another pro of making your own granola is that you can add whatever your heart desires and skip the ingredients you don’t like.

Pumpkin Granola makes a lovely and unexpected homemade gift in the fall for friends, neighbors, or coworkers. Divvy up small portions among old jam jars or takeout containers, add a cute label or message, and make someone’s day!

Serve the granola with fresh fruits and milk or yogurt. A drizzle of honey on top won’t hurt, either!

substitutions.

HONEY – you can swap it for a maple syrup or blue agave
NUTS – use any kind of nuts you currently have in your pantry; In my case, it was hazelnuts.
CHOCOLATE if you choose to add chocolate, you can add mini chocolate morsels as I did or add a crushed chocolate bar. Honestly, any kind of chocolate will work 😀

storage.

Stash the granola in an airtight container. Store:
– 1-2 weeks in the pantry
– 3-4 weeks in the fridge
– 2-3 months frozen

ingredients

 3 cups dry rolled oats
 2 tsp cinnamon
 2 tsp pumpkin pie spice
 1 tsp nutmeg
 ¼ cup coconut oil
 ¼ cup honey / maple syrup
 ½ cup pumpkin puree
 ½ cup nuts
 ½ cup chocolate morsels (optional)

Preheat the oven to 325 degrees f.

Line a large flat baking tray with parchment paper.

In a large bowl, stir in oats, nuts, and spices. Stir well until the oats are coated well with the spices. Add in coconut oil, maple syrup, and pumpkin purée, then stir until well combined and coated.

Place this mixture into the prepared baking tray and spread out evenly. Bake for about 30-35 minutes, taking out every 15 minutes to stir/flip the granola – making sure the oats toast evenly.

Once the granola is brown and crisp to the touch, leave out to cool completely. Add chocolate.
