Peach & Blueberry Yogurt Cake

Peach season is very much on here in North Carolina and I’ve been creating lots of delicious meals with them lately. Today I am sharing a recipe for Peach & Blueberry Yogurt Cake!

Every trip to the Farm ends with a basket of fresh peaches. Cannot help it! Have to enjoy them before the season is over.

This cake is really light, not only because of its fluffiness but also in the taste. The amount of sweeteners is moderate and it might not be sweet enough for some people. If you used to really sweet desserts you might need to add some extra honey or sugar.

Don’t skip the brown sugar on the top. It will crystallize in the oven and give the cake a sweet kick!

Peach & Blueberry Yogurt Cake is fluffy and moist at the same time, which makes it taste like heaven. After the first bite, I knew that this recipe will be added to my favorites.

Since I am the only one in my house that eats cakes I made two smaller pans and give one to my neighbors. They told me they are more on the sweet side, and added some whipped cream – trick you might want to try!

Peach & Blueberry Yogurt Cake

 1 ½ cups oat flour
 1 cup milk
 1 cup blueberries
 2 sliced peaches
 ½ cup plain yogurt
 2 eggs
  cup honey
 2 oz softened butter
 1 tsp baking powder
 ½ tsp baking soda
 1 tsp brown sugar

Preheat oven to 350°F with rack in middle. Grease the side and the bottom of the pan(s) with cooking spray.

In a medium bowl mix the oat flour, baking powder, and baking soda.

In a separate bowl, beat butter, sugar, and 2 eggs until very light in color and fluffy, 2-3 minutes on high speed. Add yogurt and milk and continue beating until very creamy and light in color, for about 1 more minute.
Keeping the mixer speed low, mix in the flour mix until combined.

Transfer the cake batter to the pan(s). Top with sliced peaches and blueberries/ Sprinkle the fruit with 1 teaspoon granulated sugar.
Bake until cake turns golden, and the tester comes out clean in the center. If you divided the batter into two smaller pans it will take about 30 minutes, if you baking one cake it might take 45min - 1 hour. Keep checking!

When the cake is done baking, let it cool (still in the baking pan) on a wire rack. After cake has cooled down, cut the cake and enjoy it!
