Orzo with Shrimp & Feta

Quick recipe for Orzo with Shrimp & Feta. I will be honest. I bought this Orzo pasta a long time ago for some party. And because there was a special ‘buy one, get one free,’ I had to take two. I used one box, and the second one was living a long life in my pantry.

Recently I started to incorporate more shelf cooking in my kitchen and found this gem. I had on my list:
– orzo,
– mushrooms that I had to use asap,
– and spinach.
After digging into my freezer, I realized that I have tons of shrimps.

I decided to combine all the ingredients. In the end, I found crumbled feta cheese, and I thought it’s a great addition to this dish!

Orzo with Shrimp & Feta is one of the recipes where you can add any fresh veggie that you have and any kind of protein, and it will taste great.

substitutions

spinach – you can use fresh or frozen spinach; if you don’t have any spinach at home, you can swap it for kale.
shrimps – as for protein chicken will work great here.

You can add a splash of coconut milk or half & half if you want to get a bit more creaminess.

Orzo with Shrimp & Feta

Yields3 Servings

 1 cup uncooked orzo pasta
 16 shrimps
 ½ cup feta cheese crumbles
 2 cups fresh spinach
 2 cups sliced mushrooms

Bring a large pot of water to a boil and cook pasta according to the package instructions. Drain, rinse with water and set aside.

Meanwhile, season the shrimps with black pepper, garlic salt and paprika (and/or your favorite spices). Fry the shrimps for 1-2 minutes on each side.

Add sliced mushrooms, spinach, and orzo pasta and fry for few minutes, until the mushrooms are soft.

Sprinkle with feta crumbles.
