Mini Peach-Mint Tarts

I am in a serious mint situation here. Since we started our mini garden, we’ve got to do much mint. I don’t know what to do with it anymore. How many mojitos are too many? 😀 To make this Mini Peach-Mint Tarts, I combined fresh mint from my garden with local peaches.

The peach season is so on! I am lucky to have local peaches that are grown right where I live. Every trip to a farm ends with another basket of fresh and juicy peaches.

FILLING:

yogurt – use plain yogurt; it can be a regular plain yogurt or Greek yogurt if you happen to have one. Greek yogurt has a thicker consistency than a regular one and will work great here. However, I used plain yogurt, simply because that’s what I had in my fridge. And it worked just fine!
chia seeds – will add more nutrients to the tarts, it will also thicken the filling.
mint – fresh mint will give them a refreshing kick!
sweetener – whether you want to sweeten the filling or not, it’s totally up to you. If you decided to add a bit of sweetens, you could choose from honey, maple syrup, stevia, sugar – all up to you. I used monk fruit just because I have it in my pantry, and I want to use it up.

TIPS:
• Chill the filling in the fridge while you are waiting for the tarts to bake and cool off.
• The sorghum flour can be substituted with oat flour – if you don’t have oat flour but have oats, you can blend the oats to make the flour.

LEFOTVERS

The amount of filling you will use will depend on the size of your tarts. I used muffin tins, and since they are smaller than usual tart tins, I ended up with a small amount of leftover filling. Don’t worry; I have an idea that is delicious and won’t make you waste food.
Add the leftover filling to a chia pudding!

To make the chia pudding: pour 1/2 cup of almond milk into a jar or a glass, add 2 tbsp of chia seeds and mix well. Refrigerate overnight. Add a layer of the leftover filling and top with fruits!

Consider sharing them with others; they won’t stay fresh for too long!

Mini Peach-Mint Tarts

  cup oats
  cup sorghum flour
  cup hazelnuts
 ¼ cup maple syrup
 1 tsp vanilla
 ¼ cup almond milk
 2 peaches
  cup plain yogurt
 10 leaves fresh mint
 2 tbsp chia seeds

Preheat oven to 350F.

For the crust, in a food processor combine oats, flour, hazelnuts, and a pinch of salt. Cover and process until finely ground. Add the maple syrup, vanilla, and almond milk; cover and pulse until the mixture start to cling together.

Drop the oat mixture into mini tart pans. Press onto the bottom and fluted sides of pans. Bake 20 minutes.

For the filling, remove the skin from your peaches and cut them into smaller pieces. Add the peaches, yogurt and a few mint leaves, and plus until smooth. Add more mint and a sweetener if desired; add chia seeds and mix well. Cool the filling in the fridge.

Cool the tarts for 10 minutes.

Fill tart shells with the filling. Top with additional mint leaves and favorite fruits.
