Lentil Curry

Curries are great! And this Lentil Curry is no expectation.

Do you want to know why?

Well, first, they are usually easy to make – at least mine are!

Second, you can make a bigger batch and eat and eat and eat = less cooking!

And whatever you cannot eat, you can freeze and enjoy it on days when you don’t have time to cook or just don’t feel like cooking.

These are my reasons for the love to curries, what are yours?

Lentil Curry is a quick and healthy lunch or dinner idea. It also works great as an on the go dish!

Yields4 Servings

 3 cups water
 1 cup lentils
 rice
 1 onion
 3 garlic cloves
 1 large tomato
 1 small jalapeno
 1 tsp cumin seeds
 1 tsp ground coriander
 ½ tsp turmeric
 ¼ tsp cayenne

Cook the lentils according to the instructions on the packaging.

If using Instant Pot Bean/Chilli Pressure Cook for 5 minutes.

Cook the rice according to the instructions on the packaging.

In the meantime, in a large skillet mix 1 tbsp of water with cumin seeds, onion, jalapeno and saute until onion is softened. Add garlic and diced tomato and saute for few more minutes, mixing everything together.

Remove from the heat and add cayenne, turmeric, and coriander.

Add the mixture to ready lentils. Mix together and serve with rice.
