Healthy Key Lime Bars

Healthy Key Lime Bars is a more wholesome version of the popular dessert. Those bars taste like summer! I am not kidding!

LEFTOVER COOKING: LIMES

This recipe was my first time trying a dessert with limes. I always thought it couldn’t taste too good. To be honest, I have no clue where this way of thinking came from.
But I had these leftover limes lying around, and I had to do something with them.

I did my research on the ways to use up limes, and one of them was a recipe for Key Lime Bars. However, they were not fitting into my way of eating. I didn’t like white sugar and condensed milk.

That’s how I created this Healthy Key Lime Bars, my version with ingredients that I love!

I substituted sugar with maple syrup and condensed milk with coconut cream. Similarly, I swapped the crackers for coconut milk simply because I didn’t have any crackers at home.

Crust
 ¾ cup coconut flour
 3 tbsp coconut oil
 3 tbsp maple syrup
 ½ tsp cinnamon
 1 pinch of salt
Filling
 14 oz coconut milk, chilled overnight - or coconut cream
 2 limes (juice + zest)
  cup maple syrup

Line an 8-inch square baking dish with parchment paper to hang over the edges.

Make the crust: in a medium bowl, combine the coconut flour, coconut oil, maple syrup, cinnamon, and salt. Mix with a spatula until smooth.

Transfer the crust to the baking dish. Use a spatula to smooth the crust into a thin, even layer covering the bottom of the pan. Set aside.

Make the filling: Open the can of coconut milk and use a spoon to scoop the thick cream at the top of the can into a medium bowl. Set aside the remaining liquid for another use. It will work with a smoothie.

Beat the coconut cream with a hand mixer until very fluffy, about 5 minutes. Add the lime juice and maple syrup. Continue to beat until smooth and fluffy, about 2 minutes.

Pour the filling over the crust and use a spatula to smooth out the top.

Top with the lime zest. Freeze for at least 2 hours until the filling has set.

Grab the parchment on both sides and lift the frozen bar from the baking dish. Cut into squares.

Keep in the freezer, take out 15-20 min before eating.
