Delicata Soup & Crispy Chickpeas

This Delicata Soup & Crispy Chickpeas is so delightfully creamy and flavorful. Crunchy and savory chickpeas complete perfectly the sweet delicata squash, creating a wholesome and satisfying dish.

I have to admit it was my first time using this squash. I’ve never tried before; I’ve never even seen it in a store. I got this squash in one of my fruit and veggie delivery boxes. After researching what kind of squash it is and what you can do with it, I decided to make a creamy soup. I’ve made a similar soup before, using sweet potato and carrot. That’s why I knew fried chickpeas with go great with this kind of soup.

I have to say I was surprised by the sweetness of the squash. It’s much sweeter than any squash I’ve triead so far. That’s why adding something savory/spicy will balance it perfectly.

To fry the chickpeas, you can use an oven or air fryer if you happen to have one. If you want to use the air fryer option, fry the chickpeas in 390F for 15 minutes.

The crispiness of chickpeas will add a different texture to your creamy soup, making it a perfect combo.

substitutions

chickpeas – you can use dry chickpeas or canned. Personally, I wouldn’t say I like using canned beans. I usually cook a big batch of beans and freeze whatever I don’t use. If you have an Instant Pot, it will save you a lot of time!
coconut milk – it’s optional; you can add it to the soup to make it even more creamy or use it to top the soup.
vegetable broth – if you don’t care about vegan/vegetarian ingredients feel free to use chicken broth.

When blending the soup, you need to be extra careful. Hot liquids can blow up in the blender; that’s why it’s important to add only a small amount of liquid at a time.

Delicata Soup & Crispy Chickpeas

ingredients

 2 delicata squash
 1 cup chickpeas
 2 tbsp olive oil
 1 yellow onion
 3 cloves minced garlic
 2 cups vegetable broth
 2 tbsp coconut milk (optional)
 salt, pepper, paprika

directions

Preheat your oven to 400 degrees. Slice your delicata squash in half lengthwise and remove the seeds. Place it on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Place face down on the baking sheet. Roast for 30 minutes or until fork-tender.

In a bowl, toss your chickpeas with olive oil, salt, pepper, and paprika until evenly coated. Place on another baking sheet and roast at the same time as the squash for 20 minutes. Flip the chickpeas halfway to make sure they don't burn.

While everything is roasting, slice your onion into long thin slices. Mince your garlic. Add a generous amount of olive oil to a large skillet and cook your onions until delicious and caramelized - about 5-10 minutes. Add your garlic once the onions are done and cook until fragrant. Set aside.

Once your delicata squash is done roasting, let it cool for a few minutes and then roughly chop it up. Add your roughly chopped delicata squash, the onions and garlic, and the vegetable broth to a blender. Be careful with blending hot liquids! Add only a bit at a time. Blend until creamy and smooth, adding more veggie broth if needed.

Add the blended soup to a large pot if desired and let it simmer and heat on the stove until warm and cozy. Add the coconut milk if you want your soup to be even more creamy. Top with the crispy roasted chickpeas and enjoy!
