Chocolate Millet Pudding

Millet is a grain that I know from my childhood and I recently rediscovered it. I remember eating it when I was little and then I completely forgot about it. And it’s a shame. There is so much good about it! It can be used in savory and sweet dishes – like this Chocolate Millet Pudding; it’s gluten-free and easy to digest; It’s rich in fiber, magnesium, antioxidants, iron*.

Do you use millet in your kitchen?

If you never tried I encourage to give it a try. There are tons of recipes out there! If you have an issue in finding it in your local store, I know not every store carries it – you can order online. I ordered this 4-pack for $16 and it will last me for a while!

This pudding will be a great snack, dessert, or even breakfast. It’s so easy to make and you can make as big of a batch as you want, which makes it perfect for meal prep. It will easily survive a week in your fridge! Store it in an air-tight container, or cover with a wax paper.

You can top it with your favorite fruits, add some nuts or seeds. The possibilities are endless. I usually add whatever I have in the fridge and pantry that needs to be used. Honestly, whatever you add will taste delicious.

 9 tbsp millet
 3 cups almond milk
 1 ½ tsp cacao powder
 6 pitted dates
 1 ½ tsp honey

Cook the millet according to the instructions on the packaging. Swap water for milk. It will take probably around 15 min to cook it under a cover on medium heat.

Add chopped dates.

Put the ready millet on the side and add the cacao powder and honey.

Blend all the ingredients. Top with your favorite fruit and nuts.
