Chickpea – Pumpkin Stew

Warming and comforting dinner idea that is perfect for chilly fall nights. Chickpea – Pumpkin Stew is easy to make, delicious, and so creamy it will melt in your mouth!

Don’t have orzo in your pantry? Don’t worry! You don’t have to run to the store. My mission is to create meals that will let us use up as much as we can from the ingredients we already have handy. Orzo can be substituted with any other small-sized pasta or rice.

Fresh sage can be substituted with dried sage, or you can skip it. Fresh sage gives a pleasant aroma, but the stew won’t lack the taste if you decided to skip it or substitute it.

Also, fresh spinach is optional. I added a handful of fresh spinach just because I had it lying around in my fridge, and it needed to be used. However, you can skip the spinach or use frozen if you have it. Totally up to you!

Chickpea – Pumpkin Stew

 1 ½ cups chickpeas
 2 cups pumpkin puree
 1 cup orzo
 4 cups vegetable broth
 2 carrots
 1 onion
 2 tbsp olive oil
 3 tbsp fresh sage

Peel and dice carrot and onion. Heat olive oil in a medium saucepan over medium heat. Add carrot, onion, and sage leaves and cook, stirring occasionally, until carrot and onion are crisp and sage is beginning to brown.

If you are using dry chickpeas make sure to cook them ahead of time. If you are using canned chickpeas, drain and rinse them, Stir chickpeas, pumpkin, and broth into the pan; bring to boil and season with salt and pepper.

Add orzo and simmer until pasta is ready and the stew has thickened. Adjust seasoning to taste.
