Cauliflower Rice Skillet

Quick and easy recipe for Cauliflower Rice Skillet. Low carb and light dinner or lunch idea. It’s a perfect meal prep dish because it stays fresh for a long time, and it’s easy to store.

You can add a bit of sriracha sauce to give a spicy kick.

I always have some frozen cauliflower rice in my freezer. It’s one of the ingredients where you can add a bit of this and a bit of that, and you will get a delicious meal.

I made a similar dish before Cauliflower Rice, but instead of corn I added mushrooms and skipped the cheese and tortilla chips.

Cauliflower Rice Skillet

Yields3 Servings

 1 pack of cauliflower rice
 ¼ lb ground turkey
 1 cup corn
 1 cup peas
 ½ cup shredded mozzarella cheese
 tortilla chips

Season the ground turkey with pepper, salt, and paprika. Fry on medium heat until brown.

Add cauliflower rice, peas, and corn. Fry for few more minutes.

Add crushed tortilla chips, mix all together. Add the cheese and fry under a cover until the cheese melts.

You can serve it with additional tortilla chips or eat it just like that!
