Vegan Breakfast Tacos

It’s Taco Tuesday, everyone!

If you are looking for a quick and easy vegan breakfast idea then you just found it!

• tofu
• fresh spinach
• tomato
• small tortillas
• spices: turmeric, salt, and pepper

Remove all the liquid from tofu and make sure to dry it. Smash the tofu with a fork, and add spices.
Fry in a pan with 1 tsp of olive oil for about 5 minutes, add spinach and fry for another 5 minutes.
On a different, dry, pan warm up the tortillas by frying them for 1 minute each side.
Arrange the tofu-spinach mixture on tortillas and top with chopped tomato.
