Breakfast Frittata

Breakfast Frittata is a quick and delicious idea for a wholesome breakfast. The recipe is Whole30 compliant, and as a matter of fact, it was my very first breakfast during Whole30! But the truth is you will enjoy this recipe whether you are currently doing Whole30 or not.

One thing that I love about this Breakfast Frittata, besides the taste, is that you can just leave it in the oven and do whatever else you need to do. In my case, it was a shower and getting ready. By the time I was ready for the day, my breakfast was ready for me!

To be honest with you, the possibilities here are endless. The truth is you can add whatever you want. Mushrooms, onion, spinach. Whatever your heart and stomach desire.

 6 eggs
 4 slices bacon
 ½ big tomato
 1 cup cubed squash
 fresh oregano
 fresh rosemary

Preheat the oven to 350F.

Cut the bacon slices into small pieces. I use kitchen scissors and cut the bacon into small squares. Fry the bacon for a few minutes, until it's crispy.

Cut the tomato and squash. I used frozen, already cubed squash.

In a medium-size bowl whisk together all the eggs and add salt and pepper.

Pour the eggs into a baking dish, add the tomato, squash, bacon and fresh herbs.

Bake for 20-25 min.
