Black Bean Burrito

It’s Burrito time! On today’s plate, we have Black Bean Burrito.

If you practice LefotverCooking this recipe is great for leftover BEANS & TORTILLA WRAPS.

For this recipe I used a vegan cheese substitute, you can use a regular cheese or a vegan one. Whatever fits into your diet.

Fell free to use the toppings you like and make changes in the filling. If you don’t like onion, don’t add it, add mushrooms, change cherry tomatoes to sun-dried tomatoes – there are so many options you can choose from!

For the sauce, you can use hummus, salsa, or any other dressing you like. I used blended cashews with water and some spices.

This Black Bean Burrito makes a great #lefotvercooking meal. I started creating easy and delicious recipes with leftovers to reduce food waste and save money. And I have to tell you it’s so easy, you just have to get a bit creative 😉 But in my opinion, is so worth it. It lets you save money, and trips to stores as well as keep money in your wallet.

Yields4 Servings

Filling
 1 red onion
 1 bell pepper
 15 oz black beans
 3 leaves of kale
 1 ½ cups brown rice
 ½ cup corn
Serving
 1 cup spinach
 4 tortilla wraps
 2 avocados
 1 cup chopped cherry tomatoes

Add all the burrito filling ingredients to Instant Pot, seal and set to high pressure for 24 minutes.

If you don't have an Instant Pot, cook all the ingredients on low heat for 40-45 minutes.

Spoon some of the mixture onto the centers of the tortillas. Add desired amount of spinach, avocado and other ingredients.
