Chicken and rice and everything nice! You can not have too many chicken and rice recipes in your cookbook. This Baked Chicken & Rice is so full of flavor and EASY!

The chicken in the dish is browned before being added to the pot with the rice, and the rice itself bakes in the oven. Topping the chicken with herbs and spices and the liquids from the chicken releasing into the rice while cooking makes for the richest flavors.

You can definitely add more than one chicken breast. My baking dish wasn’t big enough to fit two; the chicken breasts I had were quite big. But if you can fit more, go for it!

substitutions

RICE – if you want to make this dish more Paleo, Whole30, or just low-carb, you can swap the regular rice for cauliflower rice. The baking will take less time, about 45 min.
VEGETABLES – you can use any veggies you want. This dish is perfect to use up those veggies that are lying around for way too long. You don’t have to use the freshest vegetables; you won’t really taste the difference after baking them. So don’t be scared to use this wrinkled bell pepper 😉
CHICKEN BROTH – don’t have chicken broth? No problem! You can use any kind of both that you have. And if you don’t have any, that’s fine too—mix water with some spices, like salt, pepper, paprika, cumin.

Baked Chicken & Rice

The chicken came out just perfect, juicy, and soft. You can check the internal temperature with a thermometer or cut the chicken in half and look if it’s fully done.

Baked Chicken & Rice

ingredients

 1 chicken breast
 1 cup rice
 1 cup peas
 1 cup corn
 2 cups chicken broth
 1 bell pepper

Preheat your oven to 375 degrees. Grease a baking dish with olive oil.

Season your chicken to taste with garlic powder, paprika, salt, and pepper. Fry the chicken on a pan until browned, but don't worry about cooking it through.

Put the chicken on the side. On the same pan sauté onions, bell pepper, garlic, peas, and corn.

Transfer the mixture into the greased baking dish, add the uncooked rice and mix together. Layer the chicken breast over the top. Pour the chicken broth over top of the chicken and vegetables.

Cover with foil and bake for about 1 hour. Until the rice is soft and chicken is cooked through.
