Artichoke – Bacon Egg Casserole

This Artichoke – Bacon Egg Casserole is an easy breakfast casserole that’s made with only six ingredients! It’s a healthy, low-carb way to start the day!

This egg bake is a perfect meal-prep recipe! You can make it, cut it into individual servings, and enjoy it all week long. It’s even freezer-friendly and customizable to your taste preferences!

ARTICHOKE – BACON EGG CASSEROLE INGREDIENTS:
BACON: There are so many options to which bacon to choose. I personally like the Applegate Uncured Bacon. I love it because it’s easy to get – almost every grocery store has it – and it’s sugar-free! It has the cleanest ingredient list I’ve found so far – Pork, Water, Sea Salt, and Celery Powder.

ARTICHOKES: The best choice here will be marinated Artichokes, you can get them in a glass jar that is a perfect size for this recipe.

SPINACH: I used fresh spinach and fried it on a pan, but you can also use one that is frozen.

The first step in making this recipe to sauté the bacon, over medium heat until the bacon just begins to brown. Be sure to stir every few minutes. Next, sauté the onion until it’s. And lastly, the spinach. You can fry all of these ingredients together; however, I prepped them all separately. If you’re adding them all at the same time, add them in this order: red onion – bacon – spinach.

While the bacon/veggie mixture is cooling, whisk the eggs together with the almond milk. Then add the seasoning to the beaten eggs and whisk to combine.

Add the cooled bacon/vegetable mixture to the egg/spice mixture and stir to combine.

Pour the egg casserole mixture into a baking dish and bake in the preheated oven for 25-30 minutes.

Enjoy with fresh fruits on a side!

 6 oz marinated artichokes
 4 slices of bacon
 3 cups fresh spinach
 ½ cup red onion
 ½ cup almond milk

Preheat the oven to 350F.

Cut the bacon into small pieces, and fry until crispy. Set aside.

Chop the onion and fry on the same pan, until soft.

Set the onion aside and add fresh spinach into the pan. Fry for a few minutes.
